Glycogen

Stored carbohydrate in your liver and muscles, which empties as you go low-carb.

Glycogen is the body's stored form of carbohydrate, held in the liver and muscles. When you start the Proper Human Diet, these stores empty and release a lot of water, which is why early weight loss can be fast. It is also part of why electrolytes matter at the start.
