Tallow

Rendered beef fat, a traditional and stable cooking fat.

Tallow is rendered beef fat, prized for cooking because it is stable at high heat and rich in flavor. Along with butter, ghee, and lard, it is a go-to fat on the Proper Human Diet and a clean replacement for seed oils.
